Cape Town is the instructive case. It is one of the longest flights on the list, yet because it runs almost due south it crosses barely a time zone. You arrive physically drained but not jet-lagged; a good night’s sleep largely fixes it. Sydney is the opposite: a long flight that also crosses about ten zones, so you arrive with both problems at full strength. The hours in the air predict how tired you feel on landing; the time zones predict how long it takes to feel normal again.
Why a long flight still leaves you tired

Long flights feel punishing because of travel fatigue, a separate condition: cabin pressure equal to 6,000 to 8,000 feet, dry air, immobility and broken sleep. That depletion scales with flight length, which is why a long flight feels worse even with no time zones crossed.
If duration does not cause jet lag, why do long flights feel so punishing? Because they cause travel fatigue, which is a separate condition. The cabin is pressurised to the equivalent of 6,000 to 8,000 feet of altitude, so blood oxygen saturation falls; in a study of 502 passengers in the New England Journal of Medicine, oxygen saturation dropped by up to 4.4 percentage points and discomfort rose as cabin altitude increased. Add humidity of around 10 to 20 per cent, hours of immobility and broken sleep, and you land depleted.
